Quick And Easy Creamy Gojuchang Pasta: 20 Minutes
Malt Cake
Ingredients
🍫 Malt Chocolate Cake (Guinness Swap)
- 250 ml African malt drink (e.g. Power Malt)
- 250 g Unsalted butter
- 75 g Cocoa powder
- 300 g Caster sugar
- 150 ml Sour cream
- 2 Large eggs
- 2½ tsp Vanilla extract
- 275 g Plain flour
- 2½ tsp Bicarbonate of soda
🧁 Frosting (unchanged)
- 250 g Mascarpone
- 50 g Cream cheese
- 150 g Icing sugar (grated)
- 2 tsp Cornflour
- 125 ml Double cream
Instructions
🍫 Malt Chocolate Cake
- Preheat oven to 180°C (160°C fan). Line a 23cm springform tin.
- In a saucepan, gently heat the malt drink and butter until melted.
- Whisk in cocoa powder and sugar until smooth.
- In a separate bowl, mix sour cream, eggs, and vanilla. Add into the malt mixture.
- Whisk in flour and bicarbonate of soda until fully combined (batter will be quite loose).
- Pour into the tin and bake for 45–60 minutes. (It should be set but slightly fudgy inside)
- Let it cool completely before frosting.
🧁 Frosting
- Beat cream cheese until smooth
- Add icing sugar + cornflour
- Pour in cream and whip until thick
- Spread on top only (that signature “foam”)
