Ingredients
  

🍫 Malt Chocolate Cake (Guinness Swap)

  • 250 ml African malt drink (e.g. Power Malt)
  • 250 g Unsalted butter
  • 75 g Cocoa powder
  • 300 g Caster sugar
  • 150 ml Sour cream
  • 2 Large eggs
  • tsp Vanilla extract
  • 275 g Plain flour
  • tsp Bicarbonate of soda

🧁 Frosting (unchanged)

  • 250 g Mascarpone
  • 50 g Cream cheese
  • 150 g Icing sugar (grated)
  • 2 tsp Cornflour
  • 125 ml Double cream

🍫 Malt Chocolate Cake

  • Preheat oven to 180°C (160°C fan). Line a 23cm springform tin.
  • In a saucepan, gently heat the malt drink and butter until melted.
  • Whisk in cocoa powder and sugar until smooth.
  • In a separate bowl, mix sour cream, eggs, and vanilla. Add into the malt mixture.
  • Whisk in flour and bicarbonate of soda until fully combined (batter will be quite loose).
  • Pour into the tin and bake for 45–60 minutes. (It should be set but slightly fudgy inside)
  • Let it cool completely before frosting.

🧁 Frosting

  • Beat cream cheese until smooth
  • Add icing sugar + cornflour
  • Pour in cream and whip until thick
  • Spread on top only (that signature “foam”)
