Instructions
🍫 Malt Chocolate Cake
Preheat oven to 180°C (160°C fan). Line a 23cm springform tin.
In a saucepan, gently heat the malt drink and butter until melted.
Whisk in cocoa powder and sugar until smooth.
In a separate bowl, mix sour cream, eggs, and vanilla. Add into the malt mixture.
Whisk in flour and bicarbonate of soda until fully combined (batter will be quite loose).
Pour into the tin and bake for 45–60 minutes. (It should be set but slightly fudgy inside)
Let it cool completely before frosting.
🧁 Frosting
Beat cream cheese until smooth
Add icing sugar + cornflour
Pour in cream and whip until thick
Spread on top only (that signature “foam”)
