I’ve been out of my game when it comes to baking, so to reignite this love of mine, there was only one solution: a passion project. Being a busy mum sometimes means you don’t always have time for the things you love, but since Amirah is around, that can only mean one thing: free childcare and an opportunity to get creative.
I call this cake the ‘The Midnight Pistachio Cake’ because I think it’s the best way to describe its main components in a simple way. However, this cake is far from simple when it comes to its flavour profiles. Perhaps a better description would be a Chocolate Cherry and Pistachio Ganache Cake. Generally I would describe myself as a cake hater however, this cake was created to convert people like myself. It’s sophisticated, decadent and honestly a piece of work if i do say so myself.
