Today, we’re bringing that West Coast magic to your kitchen with a homemade In-N-Out style smash burger that’s bound to elevate your burger experience.

In-N-Out’s secret sauce is the stuff of legends, and for good reason. It’s a harmonious blend of creamy, tangy, and slightly sweet flavours that dance on your palate. 1. Choose the Right Ground Beef: Opt for ground beef with an 80/20 lean-to-fat ratio. The higher fat content contributes to juiciness and flavour, while the lower lean content aids in achieving that desirable crispy crust during the smashing process.

2. Dividing the Beef: Divide the ground beef into equal portions, approximately 3-4 ounces each. This ensures uniform cooking and an even surface for the smash effect.

3. Preheat the Cooking Surface: Ensure your cooking surface, whether it’s a griddle or skillet, is thoroughly preheated. A hot surface is essential for creating that instant sear, leading to a crispy exterior.

  • Add 1/2 tablespoon vegetable oil over low to medium-low heat. Add finely diced onions and 1/4 teaspoon salt to the hot pan.
  • Continuously stir, making sure to scrape the pan, for about 12 minutes until it starts to get golden brown.
  • Then, turn up the heat to medium. Add 1 tablespoon of water to the onions and stir until it evaporates. Repeat this process with another 3 tablespoons of water (making 4 in total), one at a time.
  • At the end, it should be a dark golden brown and completely translucent.

  1. Smashing Technique: Start by smashing your beef patties on a hot griddle, creating a crispy, flavorful crust that’s the hallmark of In-N-Out style burgers.

Ingredients
  

Secret Sauce

  • 1/2 cup Mayonnaise (115 g)
  • 2 tbsp Ketchup (~14.7 g)
  • 1 tbsp Pickle juice (15 g)
  • 1 Finely chopped pickle
  • 1 tsp Yellow mustard (~ 5 g)
  • Salt ad pepper (to taste)

Burger

  • 1/2 tbsp Vegetable oil (per burger patty) (28 g)
  • 1/4 tsp Salt and pepper (or lightly salt and pepper each side of the burger patty)
  • 1.5-2 lb 80/20 Ground beef (~ 907 g)
  • 8 Slices of American cheese
  • Toppings: caramelised onions, tomato slices, iceberg lettuce, pickle slices (optional)

Burger Buns

  • 4 Burger buns
  • 2 tbsp Butter (14 g)

Instructions
 

Make the Secret Sauce

  • In a small bowl, mix together the mayonnaise, ketchup, pickle juice, mustard, finely chopped pickles and salt and pepper (optional) together. The sauce will be a light pink colour. Set aside.

Prepare your Toppings of Choice

  • We love using caramelised onions, tomato slices, iceberg lettuce and pickles so we prepared these.

Prepare the Burger Patties

  • Weigh out 8 portions of 3 to 4 oz (~ 113g) of ground beef or eye it out.
  • Gently flatten the patty into a circle to your desired thinness, making sure to not mix or mold it too much. Sprinkle with salt and pepper on both sides. Set aside.

Cook the Burger Patties

  • Over medium-high heat in a skillet or pan, heat your oil.
  • Add the patties in. It will take about 2-3 minutes for the patty to get a nice brown crust.
  • Flip over and add a slice of American cheese on top. Let the other side of the patty cook for about 2-3 more minutes.
  • While the patty is cooking place a few drops of water in the pan and cover with a lid to help the cheese melt. When done take the beef patty off the heat.
  • Repeat this process for each of the burger patties.

Toast the Burger Buns

  • Melt the butter in a microwave safe dish using 20 second intervals.
  • Brush the inside of both buns with the butter and place face down on a pan over medium heat.
  • Take them off the pan when a nice golden brown develops around the edges.

Assemble the Patties

  • Add the secret sauce to the each side of your burger bun.
  • Assemble your burger adding your toppings of choice, two burger patties and more sauce if you wish.
  • Enjoy by itself or make some homemade fries to have the full takeout experience!
