Ingredients
  

  • 2/3 cup Unsalted butter (150 g)
  • 1 cup Granulated sugar (200 g)
  • 2 Large eggs
  • 1 tsp Pure vanilla extract (5 ml)
  • 1 tbsp Cocoa powder (2 g)
  • 2/3 cup All-purpose flour (60 g)
  • 1/4 tsp Salt (1 g)
  • 1 1/4 cups Dark chocolate (for melting) (200 g)
  • 1/2 cup White chocolate chips (90 g)
  • 1/2 cup Milk chocolate chips (90g)
  • 2 tbsp Espresso powder (~ 2 g)

Instructions
 

  • In a microwave-safe bowl, melt the butter and dark chocolate in 20-30 second increments, stirring between each increment until it's completely melted.
  • Stir in the granulated sugar, espresso powder and vanilla extract until well combined.
  • Add the eggs one at a time, beating well after each addition.
  • Sift the cocoa powder, all-purpose flour, and salt into the bowl and fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the white, and milk chocolate chips.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Preheat your oven to 350°F (175°C) for 10 minutes and line an 8x8-inch (20x20cm) baking pan with parchment paper, leaving some overhang on two sides for easy removal.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the centre comes out with a few moist crumbs.
  • Remove the brownies from the oven and allow them to cool completely in the pan on a wire rack.
  • Once cool, lift the brownies out of the pan using the parchment paper overhang, and cut them into 9 squares.
