Prepare a Baking Sheet: Line a baking sheet with parchment paper.
Prepare the Dates: Make a small incision in each date and carefully remove the pit. Gently open the date to create a pocket for the peanut butter.
Stuff with Peanut Butter: Spoon a small amount (about 1 teaspoon) of smooth peanut butter into the pocket of each date. Press the date closed around the peanut butter.
Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil together. Stir until smooth.
Dip Stuffed Dates: Dip each peanut butter-stuffed date into the melted chocolate, coating it evenly. Use a fork to lift the date out of the chocolate, allowing excess chocolate to drip off.
Place on Baking Sheet: Place the chocolate-covered dates on the prepared baking sheet.
Top with Crushed Nuts: While the chocolate is still soft, sprinkle the crushed nuts on top of each chocolate-covered date.
Chill: Place the baking sheet in the refrigerator to allow the chocolate to set. This will take approximately 1-2 hours.
Serve: Once the chocolate is firm, remove the dates from the refrigerator. Arrange on a serving platter and enjoy your indulgent chocolate-covered peanut butter-stuffed dates.
