What Conditions Are Needed For The Best Results When Making Bread?

  1. Yeast activity is enhanced in a warm environment. Aim for a room temperature of around 75-80°F (24-27°C).
  2. Moisture: Maintain a slightly humid environment for the dough. Cover it with a damp cloth or plastic wrap to prevent it from drying out.
  3. Time: Allow sufficient time for the dough to rise. This can vary depending on the recipe, but patience is key for the yeast to ferment and create carbon dioxide for leavening.
  4. Yeast Quality: Use fresh and active yeast. Check the expiration date and proof it by dissolving it in warm water with a pinch of sugar before incorporating it into the dough.
  5. Container: Use a lightly oiled bowl for rising. This prevents the dough from sticking and makes it easier to handle.

Spice Up Your Focaccia Toppings

One of the best things about focaccia are its toppings. The combination of soft and crispy bread with your flavour of choice will make you want to include bread making into your weekly routine. Here are some of the suggestions we have:

1. Mushroom and Basil Bliss: Imagine the earthy richness of sautéed mushrooms paired with the fresh, aromatic notes of basil. The mushrooms, when cooked to perfection, bring a savoury depth that complements the fluffy bread, while the basil adds a touch of brightness. It’s a harmonious union of flavours, creating a slice that’s both comforting and tantalising.

2. Everything But the Bagel Seasoning Sensation: Take your focaccia on a flavour adventure with the bold and savoury “Everything But the Bagel” seasoning. This delightful mix of sesame seeds, poppy seeds, garlic, onion, and salt transforms each bite into a party for your taste buds. The crunchy texture and the burst of savoury and nutty flavours make this topping a game-changer. It’s like bringing the essence of your favourite bagel shop straight to your homemade focaccia – a delicious twist that keeps you coming back for more.

3. Tomato, Mozzarella, and Pesto: Transform your focaccia into a Mediterranean delight with juicy cherry tomatoes, creamy mozzarella, and a drizzle of basil pesto. The tomatoes burst with sweetness, the mozzarella adds a velvety texture, and the pesto infuses a burst of herbal goodness. Each bite is a journey to the sun-soaked coasts of Italy, making this topping combination a refreshing and vibrant choice.

4. Caramelised Onion and Goat Cheese Galore: Elevate your focaccia game with the sweet, melt-in-your-mouth goodness of caramelised onions and the tangy richness of goat cheese. The slow-cooked onions bring a delightful sweetness, perfectly balancing the creamy and slightly acidic notes of the goat cheese. It’s a sophisticated pairing that turns a simple bread into a gourmet treat, leaving you craving one more slice.

5. Rosemary and Sea Salt Elegance: Keep it classic and elegant with a topping duo of fresh rosemary and a sprinkle of sea salt. The aromatic rosemary adds a fragrant, pine-like flavour, while the sea salt enhances the overall taste and provides a satisfying crunch. This timeless combination is a celebration of simplicity, allowing the quality of the bread itself to shine through with each delectable bite.

The Stretching And Pulling Process

The stretching and pulling process in making focaccia is a crucial step that contributes significantly to the texture and structure of the final product. This process, often referred to as “folding” or “turning,” plays a key role in developing the gluten network in the dough and helps create the desirable characteristics of a well-made focaccia. Here are some reasons why the stretching and pulling process is important:

  1. Gluten Development: Stretching and pulling the dough helps in aligning the gluten strands, which are proteins responsible for the structure and elasticity of the bread. Well-developed gluten provides the focaccia with its characteristic chewiness and strength.
  2. Texture and Crumb Structure: The stretching process contributes to the creation of an open and airy crumb structure in the focaccia. This leads to a lighter and more tender texture, making the bread enjoyable to eat.
  3. Uniform Rising: Stretching and folding help distribute the yeast evenly throughout the dough. This ensures a more consistent rise and fermentation, resulting in a focaccia with uniform texture and flavour.
  4. Improved Dough Strength: By strengthening the gluten structure, the dough gains better support for the gases produced during fermentation. This contributes to a good rise and a well-rounded, domed shape in the final product.
  5. Enhanced Flavour: The stretching and pulling process also aids in the aeration of the dough, allowing more oxygen to interact with the yeast. This interaction enhances the fermentation process and contributes to the development of complex flavours in the focaccia.
  6. Even Distribution of Ingredients: Folding helps evenly distribute ingredients like salt, olive oil, and any additional flavourings throughout the dough. This ensures that every bite of the focaccia is infused with a balanced and harmonious flavour profile.
  7. Consistent Results: The stretching and pulling process, when performed consistently, helps achieve uniform results in terms of texture and taste. This is crucial for ensuring that each batch of focaccia is reliably delicious.

In our 6-hour focaccia recipe, the stretching and pulling steps are instrumental in expediting the gluten development and fermentation process, allowing you to achieve a flavourful and well-textured focaccia in a relatively short amount of time.

Can I Use Any Other Type Of Flour Except Bread Flour To Make Focaccia?

Yes, you can use alternative flours to make focaccia, although the choice of flour will impact the texture and structure of the final product.

Bread flour is often preferred for its higher protein content, which contributes to gluten development and a chewier texture. However, depending on your dietary preferences or the flours you have on hand, you can explore the following options:

  1. All-Purpose Flour: All-purpose flour can be a suitable substitute for bread flour in focaccia however, your end result will be very different. While it has a slightly lower protein content, it can still yield a tasty and softer focaccia. You may need to adjust the hydration levels slightly, as all-purpose flour absorbs liquid differently.
  2. Experiment with Alternative Flours: Such as spelt, rye, wholemeal or a mix of different grains. Each flour will bring its unique flavour and texture to the focaccia. Keep in mind that certain flours may require different hydration levels, so be prepared to adjust accordingly.
  3. Gluten-Free Flour: If you’re following a gluten-free diet, you can use a gluten-free flour blend. However, gluten-free baking can be challenging, and you may need to incorporate additional ingredients like xantham gum or psyllium husk to improve the structure of the dough. If using gluten free flour for our focaccia recipe we recommend using:

500 g of gluten-free flour blend (choose a blend suitable for bread).

– 8-10g xanthan gum or 15-20g psyllium husk

When substituting flours, it’s advisable to start with small adjustments and gradually experiment to find the combination that suits your taste preferences. Additionally, be aware that the texture and rise of the focaccia may vary based on the flour used, so embrace the opportunity to create a unique version of this classic bread.

What Can I Use To Sweeten My Focaccia?

When sweetening focaccia, it’s essential to strike a balance to ensure that the bread retains its characteristic texture and doesn’t become overly sweet. Start by adding small amounts of sweeteners or additional ingredients and adjust to your taste preferences such as the following:

  1. Honey or Maple Syrup: Add a touch of natural sweetness by incorporating honey or maple syrup into the dough. These sweeteners can complement the savoury notes and add a subtle richness to the focaccia.
  2. Sugar: Granulated sugar or brown sugar can be used to sweeten the dough. Keep in mind that focaccia is not traditionally a sweet bread, so use sugar sparingly to avoid overwhelming the savoury character.
  3. Dried Fruits: Enhance the sweetness by incorporating chopped dried fruits such as raisins, currants, or chopped dates. These will add natural sweetness and a delightful chewiness to the bread.
  4. Citrus Zest: Grated citrus zest, such as orange or lemon, can bring a bright and aromatic sweetness to the focaccia without being overly sugary.
  5. Spices: Warm spices like cinnamon or allspice can infuse a subtle sweetness into the focaccia. Be mindful of the quantity to maintain a balance with the savoury elements.
